trader joe's sells goat's milk, so i bought it and turned it into ricotta.
i don't think i'll ever get over how easy it is to make that cheese. or how delicious.
then i had all this ricotta, and i didn't know what to do with it.
so i decided to fold it into some ravioli.
i used my old reliable pasta recipe, and roughly based the filling off of this one.
the thyme worked beautifully with the lemon that's used to make the cheese,
and we topped the cooked ravioli with a basic homemade tomato sauce.
